No Bake Vegan Chocolate PB Balls

These vegan, no-bake chocolate peanut butter balls are my go to for a low-maintenance dessert! They’re always hit at parties and potlucks. I love adding the oats and chia seeds for a bit of extra protein and crunch.


Ingredients

  • 1 cup of peanut butter

  • 2/3 cup of oats

  • 3 tbs of chia seeds

  • 2 tbs of maple syrup

  • 2 tbs of oat milk 

For the chocolate coating:

  • 3/4 cup of vegan chocolate chips

  • 1 tbs avocado oil (optional)

To Make:

  1. Mix the peanut butter, maple syrup, oats, chia seeds and oat milk in a mixing bowl.

  2. Roll the mixture into small ball shapes and refrigerate for 15-20 minutes, or until more solid.

  3. Mix the chocolate chips and the avocado oil together and microwave for 2 minutes, or until melted. (You can also mix the chocolate chips with a non-dairy milk or any other vegetable oil).

  4. Dip the peanut butter balls into the melted chocolate or drizzle the chocolate overtop.

  5. Refrigerate for 30-40 minutes, or until chocolate hardens.

  6. Serve and enjoy!
