Vegan Chocolate Cake
I made my first ever vegan cake!!
My boyfriend’s birthday was last week, and because he’s interested in trying to eat more plant-based, I thought it would be the perfect opportunity to give vegan cake-making a shot. I haven’t done a lot of vegan baking yet, so this was very exciting, but I was a little nervous about how it would turn out.
For the cake, I followed this chocolate cake recipe from the Minimalist Baker! All of the ingredients were fairly simple, with plenty of room for substitutes. I used oat milk instead of soy milk, and it tasted amazing!
For the icing, I used the chocolate frosting recipe under the cake recipe - it was delicious. I originally intended to do lettering, so I also wanted to make a white icing. I used this recipe from Loving it Vegan. I loved how quick and simple this recipe was! Unfortunately, the lettering didn’t work out too well for me (I let the icing sit in the fridge overnight before piping, and it hardened too much to pipe. I tried to melt it, but it was too liquid-y to pipe. I decided that my boyfriend, (who could care less about the lettering and more about the taste) wouldn’t care in the slightest, so I went with a drizzle over the cake instead.
I also drizzled melted peanut butter on the top and around the edges of the cake, for a bit of extra flavour. I topped with vegan chocolate chips, but I think vegan brownie crumbs would have gone really well with the flavours here.
Making this cake made me realize how easy vegan cake-making can be (especially if you keep it simple)! I’m looking forward to trying more recipes. Have you experimented with vegan baking? What should I bake next? Comment below, I’d love to hear your thoughts!
