Mint Chocolate Chip Banana Ice Cream
Our backyard is overflowing with mint, and I’ve been looking for new ways to incorporate it into recipes. This vegan ice cream has been so refreshing during these humid days, and it’s so easy to put together! If you don’t have fresh mint leaves, you can substitute for a few drops of mint flavouring or essential oil.

Mint Chocolate Chip Banana Vegan Ice Cream
Serves 3-4
Time: 5 minutes to make, 5 hours to freeze
Ingredients:
4 bananas
1/2 cup - 1 cup of vegan chocolate chips
2 tbs maple syrup, depending on how sweet you like it (can sub for agave syrup or other sweetener)
2 tbs of coconut milk for extra creaminess
1 handful of mint leaves (amount depends on flavour preferences - start with around 10 leaves, add more if you would like the mint flavour to be stronger.)
To Make
Slice and freeze the bananas in a bag or container (takes approximately 2-3 hours to freeze)
Once the bananas have frozen, mix all ingredients in a blender or food processor.
Pour into a container and freeze (takes 3-4 hours)
Once frozen to your preference, serve!
