Vegan Chocolate Chip PB Protein Dough

One of the biggest perks of eating vegan? You can always eat the dough raw without worrying about getting sick!

Recently, I’ve been seeing more and more gourmet, vegan, edible cookie dough options popping up. While these are great options to have, they can get expensive and are often filled with unhealthy additives.

Luckily, there are many simpler, cheaper, and healthier alternatives! I’ve been attempting to make a few different variations of homemade cookie dough and finally settled on this combination of 5 simple ingredients: chickpeas, peanut butter, oat milk, maple syrup and vegan chocolate chips.

Not only is it packed full of protein, it’s also made up of items that you probably already have at home (and if not, you can probably find at a low cost and in low-waste packaging).

With the weather getting warmer, this no-bake snack has been my go-to when I need a spoonful of something sweet!


Vegan Chocolate Chip Protein Dough

Makes 1 medium sized bowl or 2 small mason jars of dough

Time: 5 minutes of prep, 30 minutes to chill

Ingredients

  • 1 can of chickpeas, rinsed

  • 4 tbsp of peanut butter

  • 1/8 cup of maple syrup

  • 1/8 cup of oat milk

  • 1/2 cup of vegan chocolate chips

To Make:

  1. Add the chickpeas, peanut butter, maple syrup and oat milk to a blender or food processor and mix until smooth.

  2. Transfer to a bowl and stir in the chocolate chips.

  3. Refrigerate for 30 minutes and serve chilled.
