Chia Seed Pudding Recipe

Chia Seed Pudding is one of my favourite low-maintenance, easy to meal-prep snacks! With just a handful of ingredients, this protein-packed pudding can be whipped up in few minutes and ready to eat after just 2 hours of refrigeration.

I have a major sweet tooth and I love a little cup of this with some fresh fruit to cap off a meal. You can also play around with the flavours and toppings to make the pudding customizable to your craving!


Chia Seed Pudding

makes 1 small jar of chia seed pudding

Time: 5 minutes of prep, 2 hours to chill

Ingredients

  • 1/2 cup of Oat Milk

  • 1 tbs of maple syrup

  • 1 tsp of vanilla

  • 2 tbsp of dry chia seeds

For the chocolate flavour:

  • Add 1 tbsp of cocoa powder

  • Add 1 additional tbsp of maple syrup (or other sweetener to offset the bitterness of the cocoa powder)

To Make:

  1. Mix all ingredients together in a container and stir well. Depending on your desired serving size, you may wish to increase the amount of oat milk and chia seeds at a ratio of 1/2 cup oat milk : 2 tbs of chia seeds
    (Tip: use a mason jar and shake well to evenly distribute the chia seeds within the liquid)

  2. Refrigerate for 2 hours, stirring once in between if needed. Once ready, the chia seeds will have absorbed the liquid and “jell” into a pudding-like state. Enjoy topped with fresh fruit and nuts!
